THE PRODUCTION PROCESS

The basic wrapping consists in grouping them in salty hanks: this process has to be very precise as, in relation to the customers’ requests, each single casing is measured and checked and each hank must have the same length and capacity. Every hank is afterwards labelled by means of different coloured rings in order to be identified in size and eventually salted to be preserved.
Another way of working the guts is to wrap them by means of small, rigid or soft, tubes applicated on specific tools used by the expert hands of our highly skilled workers. Even in this case, the size follows the customer’s request.
According to our customer’s needs, the guts may be wrapped in single salted vacuum-sealed hanks or in small containers full of saline solution. The productive possibilities are various and our factory is able to fulfil any kind of request.
